Sweet Potato Paleo Muffins

I made a few revisions to the original recipe and was delighted by the delicious flavour that held up despite my tweaks. They’re the perfect on-the-go breakfast but also hit the sweet spot for afternoon coffee, a combo that’s quickly become a daily essential for me. Most satisfying will be revealing to your friends just how healthy they are.

Paleo Lemon Slice

This tangy little trinket was inspired by a few of the top hits when you google the aforementioned title. But I adapted slightly with the ingredients I had, and was really happy with it. I keep it in the freezer, because everyone knows frozen baked treats are the business!

Lentil Salad

This healthy salad is made with cooked lentils and diced fresh diced carrots, celery, bell pepper, onion, parsley and lemon juice – perfect to make ahead for lunch for the week as the flavors only get better overnight. It’s also vegan, high in fiber, protein and only about 100 calories per serving.
